Which knife fits my need?

Choosing the right knife is essential. There is no type of knife for ALL applications, but each type of knife with its handle and blade shape and its physical properties is designed for a very specific application.

That’s what our friend, the sushi master, is learning as well!

OUTDOOR knives

The bottle opener knife with its 8.5 cm long and 4 mm thick blade and the short handle is a rather compact companion, e.g. while hiking or barbecuing. The so-called thumb ramp on the back of the blade increases grip when cutting. As the name already suggests, not only solid foods can be processed with the bottle opener knife. This knife is ideal for hiking or barbecue use, where a sausage needs to be cut or a crown cap bottle needs to be opened.

This knife type is optionally available with a fixed rivet or a detachable screw connection, e.g. to install replacement handles.

The small hiking knife is a rather small companion with its 8.5 cm long and 4 mm thick blade and the short handle, which can be carried on the belt, backpack, etc. for hours without any problems due to its compactness and weight. The so-called thumb ramp on the back of the blade ensures increased grip when cutting. A paracord can be braided through the slot at the end of the handle, whether for technical or aesthetic reasons. This type of knife is optimally designed for hiking or EDC (Every Day Cary) use, as it is compact, light and quickly at hand.

The hunting knife also has a relatively short (8.5 cm) but strong (4 mm) blade. This allows the user a controlled application to perform robust tasks such as breaking up wild game, executing or making targeted cuts. With this type of knife, the handle is larger overall, which allows more power to be used when needed. It is therefore also designed for hikes or sometimes even light bushcraft use where “harder” work is required. Through the hole at the end of the handle it is possible to pass a paracord through, whether for technical or aesthetic reasons. This knife is optimally designed for hunting use or as a companion on hiking tours, where frequent, difficult tasks have to be completed. The bushcraft knife has a 4.3mm thick and 12cm long blade. This shape makes it extremely robust, which means that even rough chopping or splitting work on wood can be carried out. The so-called thumb ramp on the back of the blade provides more grip when cutting. The handle is ergonomically shaped and, thanks to the sloping geometry, offers the option of holding the knife relatively far back in order to exert more power when chopping. Here, too, a paracord can be braided through the hole in the grip area, for example to to use as anti-slip safety. This type of knife is the ideal companion in the garden, on hikes or in the survival area. KITCHEN knives

The chef knife is the most commonly used cutting tool in the kitchen. Due to the high and long blade, a wide variety of cutting techniques can be implemented. Whether chopping onions, weighing herbs, opening pumpkins or dividing bananas lengthwise the chef knife is a real all-rounder and should be found in every well-stocked kitchen.

The utility knife is designed for filigree, fine cuts, which is why the cutting edge is very thin thus extremly sharp. This makes it ideal for cutting harder things, such as ham. With juicy meat, the sharp knife cuts cleanly through the delicate piece of meat and does not “mash” the cuttings, which means that liquids and flavors are retained. This keeps the meat tender during cooking.

The same applies to soft fruit and vegetables, which is why this knife can also be used there.

The paring knife is a small, light knife that is mainly used for peeling fruits and vegetables. Nevertheless, it can also be used to cut or decorating food.

With its 16cm blade length and 4mm blade thickness, the cleaver is a really massive kitchen helper. The strong blade allows coarse chopping of meat and fish. Even thin bones won’t be a problem. The cleaver can also be used wherever rougher work is required, such as working on pumpkins, coconuts, etc..

Soon available

With its teeth, the bread knife is suitable for cutting hard pastries. The teeth literally bite into the hard crust and cut the pastry, whereas knives without teeth would crush the pastry. The bread knife is also useful for cutting very soft materials, such as flatbread, to use. Thanks to the very long blade, the flatbread can also be sliced horizontally without any problems.

Soon available

The fillet knife is used for particularly fine cuts. The field of application includes the filleting of fish and meat or the separation of pulp and skin or core. Thanks to the long, thin and flexible blade, these tasks can be carried out effortlessly with the fillet knife.
